Kiwadachi is Tokyo’s only dedicated hiyamugi restaurant, located in the Solana Kinshicho building. This intimate spot is renowned for its house-made hiyamugi noodles, crafted with a special blend that includes stone-milled whole-wheat flour from Kagawa Prefecture. Guests can savor these noodles in unique textures such as thin and flat varieties, served both as cold noodles and as "hiyamugi sashimi.
